This is probably one of our go-to recipes that we kind of developed from another recipe.
It’s the Fourth of July (2018) and it was different than any other one since I’ve been with my husband. This is HIS first year not in RETAIL!!! His position now has him doing different things and does not require him to be in the store, throwing stock! So, he was home by 130 and we got to spend the afternoon AND evening together. Normally, that is NOT the case.
A few years back, I found this recipe for spinach parmesan chicken meatballs on Pinterest. IT IS A GOOD ONE!!! The only thing I do different is I sauté my onions before putting them in the meatball mixture. And I use my own sauce.
Looking for something different to do with our burgers (that we probably have once a week), my husband suggested trying to make a chicken burger inspired by this meatball recipe.
Now I have tried to make chicken burgers once before. They did not turn out so well. I tried to do them the same way we do beef burgers. Meat…seasoning…grill. Those did not go so well. These…GO SO WELL!!!
Since 2011, we have watched our local fireworks from our boat in the harbor. Since that’s right where they set them off at this particular location. We’ve dodged some storms before, but it’s always turned out great for the show. We usually head out there around 5ish (depending on schedules) and grill on the boat, enjoy apple pie and ice cream (yes, on the boat) and visit with whoever we’ve invited with us. It’s normally two boats, our’s and my sister and brother-in-law’s. This year was a bit different as it was thunderstorms in the afternoon and my sister and her husband weren’t able to go. We had an early dinner and relaxed (normally…go go go) at home until we thought the storms were past and we could head to the boat ramp. We were hoping that we could still watch the fireworks from the water, but were still unsure of the exactly plan until it was go time.
All it takes for this recipe is:
- 1 pound of ground chicken (I use the white and dark meat one, but you can use the white meat only, if you’d like)
- about 4 oz of raw spinach leaves, chopped
- 1/2 package of chunk Pepper Jack Cheese
- 1 egg
- about 1/2 cup breadcrumbs or panko
- about 1 tablespoon of Italian seasoning
- about 1/2 teaspoon of red pepper flakes (depending on how spicy you like it)
- canola oil and salt for seasoning.
Chop the spinach, then just throw it all in the bowl and mix it up. I like to use a rubber spatula. Then I take 5 pieces of wax paper, divide the mixture into 5 equal sections and carefully form the patties. I don’t like to touch patties too much because I don’t want to make them tough. You will want to pack them a little bit, but it can mostly be done with the spatula.
When you’re ready to put them on the grill, brush a little canola oil and sprinkle with salt. Toss them on the grill and oil/salt the other side. Cook them until they’re done.
Needless to say, we waited out the storms and left the house around 8pm. We got to our destination and settled about 15 minutes before fireworks began. And we were back home by 10:10pm (usually this is a 11:30pm or later home time). Make sure you follow me on Instagram to see our “interesting” family photo on the boat. haha!
As for the burgers, they were delicious as always. We like ours with a little BBQ sauce and a bun. But the sky is the limit. Leave me a comment with how you’d dress them, especially after you’ve made them.
